Made by you Monday

Skip to my Lou is one of my favorite blogs to follow so I have decided to participate in her "Made by you Monday's" in which every Monday I will post something made by me. I love DIY projects so I thought this would be a perfect way to motivate myself.
Today's post are cupcakes that I made last week for a birthday luncheon at work. I named them surprise cupcakes... and man they are dangerous. You no longer have to choose between a cookie or a cupcake, this is the ideal dessert and SUPER easy.
So you first start out with these ingredients....


Any flavor of cake mix... (vanilla, chocolate, red velvet, etc.), any kind of cookie dough... I get the pre-cut squares and I have only used chocolate chip (but I'm thinking sugar would be delish too), your choice of icing (here I used duncan hines creamy butter cream and it was amazing), cupcake cups, 3 eggs, vegetable oil, water, and your choice of sprinkles (I used mini chocolate chips).
Okay so step 1 is to just make the cupcake batter as printed on the back of the box. Preheat the oven and combine mix, oil, water, and eggs together.


Blend until all is mixed.


Step 2: Put all your cupcake cups into the muffin pan and fill about 2/3 of the cup with batter.


Step 3: Break of a piece of your cookie dough and you can either place in the batter as is, or roll it into a ball, which is how I prefer.



The batter is going to look like its about to overflow the cup once the dough is stuck in but let that worry you... it will turn out perfect.


Step 4: Once those are all stuffed, just pop them in the oven for the suggested time on the box and while they are baking... of course licking the bowl is a must (at least for me).
This little helper was hoping she would get lucky and get a lick herself.

Then WOOOLAHHH!


They come out looking just like a normal cupcake... with a surprise treat inside.
Step 5: Let them cool and ice them with your favorite icing. I thought I'd share a little secret I learned on icing cupcakes. Just dip in using the back of a metal spoon and use a circular motion, so simple.

Step 6: Springle with sprinkles of your choice. For decoration you could even stick a mini cookie in the icing.
Step 7: INDULDGE! Have 2 or maybe even 3. I mean after all, we all know we need those "pick me up's" on Monday's. Have a wonderful week.
